In the below storage check what are the default values for when this will alert with a warning and critical?
I presume when it says default that means parameters ARE used but only the default is used correct?
Also is it possible to also monitor the individual files shares within these storage accounts?

If there were default values, they would be shown where is now “(no parameters)”. Just as with the normal file system check:
So in this case there are no default values given and you have to create a rule for an alarm.

Regarding monitoring the individual file shares within storage accounts in Azure, we currently do not support this yet. I have included these as an input for general improvements for version 2.4.
