Using checkmk enterprise 2.1.0 p20, I’m looking where I can enable graph for “check_mk-nfsmounts”.
I have details, alerts etc but not the graph, is there a way to setup one ?

Yes, performance data is supported by this check, just not enabled by default.
You need can enable it with a rule in the corresponding ruleset:
Setup > Services > Service monitoring rules > “Network filesystem - overall status and usage (e.g. NFS”
(or just search for “nfs” in the search field in setup)
In your new rule, besides setting limits etc., you can then enable performance data
