Can anyone please explain/advise on this rule and why checkmk’s default when selected is as follows:
Is it because in theory if ANY errors are occurring on an interface then there’s an issue with it? Why are the warning and critical levels set so low?

it’s quite a simple answer because you don’t want to have any errors in general.
It’s always a sign of trouble. In the past few years, I had a few occasions where it was okay or simply not possible otherwise to increase the error thresholds. For example, printers or buggy BMC’s. These types of devices have most of the time a pretty poor network stack implementation, but in general you want to get informed on errors in your network.

So I configured to the checkmk defaults.
I am getting a number of errors, see below, but the corresponding AP in the Meraki portal is not showing as connection problems during this time period.

there is a pretty simply reason for that.
The interface errors you see are errors on your Wi-Fi radios of your access points.
This is completely normal because it is Wi-Fi. Devices lose connection, roam the access point, sometimes a packet needs to be retransmitted and so on. This can cause errors on the interface statistics.
You can just ignore the errors on your Wi-Fi radio interfaces.

How would you do this and how can you tell they are from the WiFi radio interfaces?
is it anything with apr against it’s name?
Did you name them?
They look like custom names, and if each one of them starting with apr
is an actual AP, then yes. You can create a rule stating that you want to ignore error rates on those interfaces and then see if it’s reported as you’d expect it to be.
You likely won’t be able to track it well enough unless you name all the ports containing AP’s with an actual prefix.
