please don’t take this the wrong way, I don’t want to sound patronizing. But I would say: All of them.
If you were to print out the intro handbook, you would end up with ~60 pages. It’s probably a worthwhile investment of your time to work through those if you are new to Checkmk.
It starts with Setting up Checkmk (which I guess should answer your first question).
Your second question will probably be answered in this section: Switching on notifications
But the sections in between are pretty important, so I really recommend working through them from top to bottom.

i think my issue is my outlook isn’t recieving the messages for some reason so it prob isnt a checkmk thing.
